Emergence Linkwood 9 yr Single Malt Scotch
$85.00Linkwood has always been a long time favorite here with the Raising Glasses staff and we jumped at the chance to obtain an entire sherry butt of this legendary Scotch. Its intensely floral nose immediately captivated us, followed by flavors of citrus zest, honey, fresh stone fruit and a toasty malty backbone.
The first in our series of Linkwood releases, this EMERGENCE edition was fully matured for 9 yrs in a refill oloroso sherry butt and bottled at cask strength, resulting in a dram of velvety oily texture and powerful elegance.

Burning Cane (15 yr Barbados Foursquare)
$49.99We jumped all over this cask instantly – currently there isn’t a hotter distillery in rum than Foursquare and its hype as “The Pappy Van Winkle of rum” is fully deserved: Powerful and multi-dimensional yet very approachable, even for rum newbies. Some single cask Foursquares trade for four figures … but our Burning Cane gets you cask strength world class juice at an impressive 15 years of aging for less than $50. At the time of this bottle’s release we compared this to Foursqaure’s vaunted Exceptional Cask Series – it would have ranked #1 for highest ABV and #3 for longest aging.
Cask strength Foursquare of this age can be a seductive gateway to fine rum, with fragrant summer fruit notes to grab cognac aficionados & the caramel intensity and oaky backbone to pull in whiskey fans. This cask’s luscious kettle corn opening evolves to a prolonged tree bark and gingerbread cookie finish.

Guardians (8 yr Trinidad Rum)
$45.00OUR TAKE: Guardians is the real sleeper in this lineup – Trinidad has produced some of the greatest rum in history (RIP, Caroni!) but also puts out a lot of so-so high volume juice so we didn’t enter the selection process assuming we’d come out with a “Trini”. And while the Foursquare and the Guyana were big, bold flashy candidates, this Trinidad kept popping up, refusing to be ignored (maybe because it’s over TWO THIRDS alcohol but drinks more like a 55 percenter). We succumbed to its fruity delights with absolutely zero regrets!

Moongazer 9 yr Guyana Versailles Pot Still Rum
$45.00Over 250 yrs old, Diamond Distillery’s legendary Versailles still is one of only two wooden pot stills in existence (FIRE & WOOD aren’t a formula for longevity?!?) and this bottle is a classic example of its intoxicatingly pungent notes of raisin syrup, birdseed, mocha, charred banana, black tea and ozone.

Yowie 16 yr Australian Rum
$60.00One of the oldest independent bottlings of the Beenleigh Artisan Distillery, Yowie was made with the indigeneous S. Pombe yeast (discontinued in 2010) which produces low output but loads of rich flavor compounds, resulting in an elegant, herbally potent rum redolent of eucalyptus, tangerine and molasses funk, giving way to a sophisticated dry finish.

Kinnaree 9 yr Thailand Rum
$40.00We’re excited to be one of the very first IBs to release a rum from Thailand. While most of their domestic releases are heavily sweetened, we were so thrilled that their unadulterated distillate is wonderful stuff (at a reasonable price!) that we bought two casks. We’ve always wanted a quality “gateway” rum that was instantly accessible to rum newbies but still had the complexity and stamina to impress jaded rum aficionados. We were thrilled to find this rum in Thailand, a new country for most rum drinkers.
Why is this the “female” cask? She opens beautifully with lush, resonant floral notes while its sibling “male” cask has a strong lingering oaky finish.

Manora 9 yr Thailand Rum Blend
$35.00Asian countries speak of the half human/half bird Kinnaree and Kinnara. A famous Thai play involves “Manora”, a Kinnaree that was captured & gifted to Prince Suthon who fell in love with her. When Suthon left for war, jealous advisers convinced the King to sacrifice Manora. Manora escaped and fled to her homeland. The prince went on a quest to find his beloved & they returned to court to live happily ever after. When performed, “Manora” was often played by a male, reflective of Thailand’s historical acceptance of gender fluidity. This blend celebrates their acceptance of LGBTQ & transgender people (which includes our youngest daughter)..
Our “female” cask opens beautifully with lush, floral notes while our “male” Thai cask has a strong lingering oaky finish, making this a perfect “gender blend”!

Innocence Port Dundas 21 yr
$90.00Our first Scotch is a spectacular cask strength single grain from Port Dundas that sadly closed in 2011 – once the existing stores of Port Dundas are gone this tremendous elixir will go extinct. Single Grain Scotches are growing in popularity (and price) as they combine the complexity and sophistication of Single Malts but with the approachability of American bourbons – which makes sense as the Port Dundas mashbill consists of American corn, barley and rye (much closer to bourbon than Single Malt Scotch’s mashbill of 100% malted barley).

Opulence
$120.00Being the savages we are, we purchased a brand new Oloroso sherry quarter cask (those suckers are NOT cheap) and used it to age over half of the Port Dundas for the last 9 months. The smaller size of the quarter cask accelerates the aging process (higher ratio of wood surface area to total liquid volume), imparting an oakier backbone and the rich fig & pistachio flavors of a first fill Oloroso sherry cask. Its deep copper hue will satisfy “Dark AF” fetishists too (you know who you are) !
