Our first Scotch is a spectacular cask strength single grain from Port Dundas that sadly closed in 2011 – once the existing stores of Port Dundas are gone this tremendous elixir will go extinct. While prices are skyrocketing for highly aged Port Dundas, not all barrels are created (or developed) equal! We tasted this hogshead barrel and her sister barrel and the difference was startling! “Sis” was fairly tame and muted but this barrel was vibrant, intense and luscious and an easy pick. It’s a lemon custard / Granny Smith apple bomb!
Single Grain Scotches are growing in popularity (and price) as they combine the complexity and sophistication of Single Malts but with the approachability of American bourbons – which makes sense as the Port Dundas mashbill consists of American corn, barley and rye (much closer to bourbon than Single Malt Scotch’s mashbill of 100% malted barley).

$105.00Founded all the way back in 1825 by John MacDonald, the Ben Nevis distillery sits below the eponymous mountain. The distillery has switched hands over the years and even to a Canadian, Joseph Hobbs, who made his money smuggling spirits across Lake Ontario to the United States during prohibition. At the moment, it is most recognisable as a single malt but has also made its name through its current Japanese owner, Nikka, who have historically used the whisky for production in its own blends, including Nikka Black.
Known for its robust character, the spirit is able to hold its own when aged in more robust casks, which includes this bottling, which has matured fully in a first fill Oloroso sherry hogshead.
This single malt scotch whisky is non-chill filtered and naturally coloured, yielding 311 bottles at a cask strength of 58.7% ABV.

$190.00This 11-year-old Staoisha is a peated single malt scotch whisky from Bunnahabhain distillery on Islay. This Staoisha single malt was distilled in 2013 and matured in a refill cask before being transferred to a first fill tawny port wine barrique in 2020.

$85.00The second in our Linkwood series, this ASCENDANCE edition was matured for 9+ yrs in a refill Oloroso sherry butt, then finished for 9 mo in an Oloroso sherry quarter cask, then bottled at cask strength. The double Oloroso maturation makes for a majestic dram of dark fruit, leather, bitter almonds and citrus-infused honey.
